Tapping the resources of a grove of mature maple trees on their farm on Turtleback Ridge, the McGee family is now producing a pancake lover's necessity. Maple syrup was first produced for personal consumption by Susan and Kevin McGee and their son, Keegan, who live on the farm they purchased 22 years ago. this year we are tapping 70 trees and have already harvested about 1,500 gallons of sap. A hollow tap, a pipe like piece designed to not harm a tree, allows some of the natural spring flow of sap to pass into the tap and drip into buckets or containers made to gather the sap. Syrup is produced through a process of straining anything not sap out of the containers then evaporating the sap in stages until the syrup consistency desired is reached. A standard production estimate is that 40 gallons of sap are needed to produce one gallon of syrup, she said. But get there fast, because last year Turtleback Ridge Wares maple syrup was sold out by late May. This year is also the first year the McGees have been using a more modern, though still wood-fired, evaporator system.
